I'm big fan of Jalapenos, pepper, and hot sauce. I actually believe that each dish has is complementary spicey hotness. So how do you torture your mouth?

Favorite brand of Hot Sauce
I love Frank's Red Hot for most things including my nachos. Though I like Tabasco on my burgers because I don't like masking the taste of the burger.

Best kind of Peppers
I put Jalapenos on pizza, nachos, burgers, and a few foods I probably shouldn't mix them with.

Any personal tricks or preferences to spice up your food
Having a roommate from New Orleans is a good way to broaden your face burning horizons.

Favorite brand of Hot Sauce

My favorite brand is Louisiana Hot Sause by Carriage Trade it is a medium hot ,hot sause that goes good in soups or on rice/noodles.

My second favorite is Chili garlic Sause brand name 'Toung Ot Toi Viet Nam' by Huy Fong Foods Inc., it's very good on Chinese food .

Best kind of Peppers

Like you I like the Jalapeno in soups or salsas or in Chili & beans .

Any personal tricks or preferences to spice up your food

I use a hot Chili & Garlic sause on my Chinese food . I like to mix up a dish of the Chili Garlic Sause with some Plum Sause ,about a 5 to 1 mix Plum sause to Chili sause that way you get a very hot but sweet dipping sause for Egg Rolls & Pot Stickers .

Thethirdman, I heard of this place...can't remember where, but it has a competition of who can eat 6 of their hot wings in a certain period of time without needing a drink of water. They say the sauce is so hot it burns your fingers before you even get it to your mouth...I think you might like it, you seem to be a fan of spicy food. ;)

I'm not a fan of hot sauce...too peppery. But my family makes our own salsa, and I like to add jalepenos to it. :D Almost every food in the world can be made better by either Ranch dressing or Salsa, I believe!

I'm making a big Chicken Vindaloo for a bunch of friends next week, it includes (apart from the chicken pieces ;) ) mustard, pepper corns and chilli peppers. I'll be serving it with heaps of basmati and gallons of milk! Milk is the only drink that seems to calm your mouth down after eating very hot and spicey food..at least it works for me :D

Celery takes the heat out of your mouth as well. ;) I often serve spicy chicken wings, celery and ranch dressing together.

I only use Cholula hot sauce, because it actually tastes good. No offense to the aforementioned hot sauces--they are somewhat piquant, but most of the brands out there have a terrible reek of vinegar.

And I'm a big fan of chili peppers in and of themselves, but I don't think there's anything special about eating spicy things (that is, my ability to eat spicy things has to do with tolerance I've developed, not my worth as a human being :lol:). I do add minced/sliced/pureed/roasted peppers to dishes when I deem it fitting, but overall I think people get carried away. That is to say, if I can't taste the food anymore, then there's too much.

I like the flavor of jalapenos to a degree, but I find them slightly bitter, plus they aren't really very piquant. Don't get me wrong, I still appreciate how hot they are, but it takes too large a quantity of pepper flesh (and seeds) to spice my cooking up. I did try to stuff and fry some jalapenos once (with some sofrito, cream cheese, and cheddar), and it was quite delicious, but not worth all the fine knife-work.

That's why for stuffing I almost always opt for poblano peppers, because, well, they're big enough. Chiles rellenos is a very involved dish, but I think the payoff justifies the hours it usually takes. I also sometimes use poblano slices in my fajitas because they're slightly piquant, they have a distinct flavor, and the color stands out nicely if I use a yellow bell pepper and red onion with it (green bell pepper/capsicum tends to dull before it has a chance to blister from the frying, but the poblanos stay relatively bold).

Overall though for cooking I use mostly serrano and habanero peppers, depending on the flavor and piquancy I'm going for. Serranos are my salsa pepper of choice because a little goes a long way, and I don't have to worry about burning my tongue off. So one or two serranos (I usually remove the seeds and veins of one if I use two) in a batch of pico de gallo generally gets me where I need to go. Plus, I usually mix a teaspoon or so of minced serrano into my sour cream for tacos! Habaneros on the other hand I never use raw, but for soups, beans and rice, and more classical sauces, I really like their versatility.

Recently a certain CoS member sent me some delicious and beautiful home-grown red chili peppers (of several varieties), which I devoured in short order! I love red peppers because they tend to have an almost smoky flavor and some sweetness behind the piquant facade. Ooh, those Thai peppers were great. I have a great deal to say about chili peppers, but that's my chili pepper intro, so I'll be back.

I like medium hot spices, but my roommate collects serious hot sauces. They have names like Fear Itself, Kiss of Fire, Black Widow, and a few others I can't name here, since they'd be censored. :lol: They're mostly Habanero based, too hot for me!

Actually, I just found the name of it again! I saw it forever ago in my Travel & Tourism class in a show we watched from the Travel Channel. :p
It's the Cluck-U Chicken restaurant in Newark, Delaware. :rotfl:
(apparently their 911 sauce is so hot, you have to sign a waiver to get some!! :eeep:)

Umm, Texas Pete! (Orange for medium-hot.) It's not really BURNING, but it adds some nice spice to Bean-with-Bacon Soup. :drool:

Sambal Olek. Awesome garlic chili sauce. You can find it in the Asian aisle of most grocery stores. But you can add it to almost anything.

I add sambal olek to almost anything. It's amazing in pasta sauces, soups, etc. You can also get sweet chili sauces and use it instead of salad dressing/dip. If you have dried chili flakes toast them in the pan a bit before adding it into meals.

I love my dad's 'firecracker style' wings, and we cook 'em up every year for the Superbowl. They really make your eyes water. Other than that, I prefer my Thai food spicier than most do.

I agree I like Wasabi as well. And in Germany we have something called mehrretich (ya probly not spelt correctly) that is also pretty good.

Favorite Pepper:
Jalapenos hands down

On Christmas we served fondue with a variety of sauces, one which included a horseradish mustard sauce or something like that. It was similar to wasabi, and I was dared to eat a whole spoonful. boy was that ever spicy

For those who are burning their mouths, I find that besides a glass of milk, the next best way to kill the burn for me is a big spoonful of sour cream .You just roll it around in your mouth and the burning cools down to a livable level.

my first favorite is my hubby's home made salsa, when we first got together he found out that i love salsa on just about anything and i mean anything. :whistle: so he said he'd make some for me hahaha sucker, im hooked.:drool:

then my sister went and got me hooked on Pepperocinis, and i love those, eat a couple of jars a month :err: can't help it :love:

and i always keep a jar of Louisiana Hot Sauce on hand just in case i run out of something else, or just when i want some hot sauce

everyone wonders how i still have a stomache lining left? :whistle:

As you can tell I hate spicy food though I will on occasion set my disliking for it asidIe and eat something spicy. During the summer I stuff jalopenos with cream cheese, wrap them with bacon and throw them on the grill.

Ive tried "Mad Dog 357 Ghost pepper (http://www.hotsauceworld.com/hottest-hot-sauce.html)" sauce when I was 18 or so at a potluck at work. I had to go home because I was in such pain. :lol:

My boyfriend is terrible with spicy stuff- he has a packet of five scotch bonnet peppers on a pizza...
As well as milk (if you are old enough) Lager is good for calming spicy mouth
I like Nando's hot peri peri sauce
