My absolute favorite has been mentioned, but I'll mention it again. Sorcerer's Stone when he stood up to Draco at the Quidditch Match and said "I'm worth twelve of you." How true that is!

Urg, I'm repeating a bunch of people here, but: "I'm worth twelve of you, Malfoy," is the best!

...and the whole dialog where he's trying to keep Ron, Harry, and Hermione from going to save the Philosopher's Stone.

I definitely like the "I'll join you when hell freezes over..." quote as well. :)

I quite like this from DH: "The thing is, it helps when people stand up to them, it gives everyone hope. I used to notice that when you did it, Harry."

When he's talking about the Aurors trying to arrest his Gran:

Although I don't have my deathly hallow book with me which is where many of my favorite Neville quotes come from.
I can't even paraphrased it but when he was updating Harry, Ron and Hermione on what's been going on in the school the way he said made it amazing.
