Recipes for Lactose Intolerants
*stands up* My name is Francisco and I am lactose intolerant.
I was wondering if anyone goes through this curse, and if there are any recipes (without dairy!) out there that are worth sharing. Us, people who can't eat cheese, totally need a support group.

Re: Recipes for Lactose Intolerants
I have the same problem. Luckily I have found lactose free milk - but to be honest after not drinking milk for about 2 years I don't use that much of it. Only when I have cereal. Also, goats cheese (I know not everyone likes) is great as is a soya "butter" instead of proper butter.
I found it's really helped me to have some substitutes, also things like peppermints / peppermint oil/ peppermint tea really helps soothe my tum after having some dairy. There are loads of recipes! Trick is though as I said is to find substitutes that work for you and to incorporate them into your cooking/baking. It makes a massive difference. I was also given this link you might find useful. In terms of desert/sweets it can be more difficult. I don't eat milk chocolate anymore but I don't really like dark either

Re: Recipes for Lactose Intolerants
Maybe it's helpful to search for vegan recipes and products, too, since they're yummy and naturally without milk. By now there are even 'milk' chocolates, who taste quite nice.
I don't taste much difference between soya and other butter eg, but I taste a big between soya milk and cow milk. But there's also oat milks for instance, what's very yummy. For lunch recipes I'd maybe go for veggie-potato pans and the like. It's also possible to bake cookies, cake etc. without milk products (I'd check vegan recipes there again). They've the same taste etc. as 'normal' cake if you're just used to use products besides milk etc. (Besides that most breads you buy in the supermarket don't use milk anyway).

Re: Recipes for Lactose Intolerants
Soy milk is foul. As is Rice milk. I've tried them all! Soy milk is only acceptable in Chai latte. I pretend it's cream.
Vegan food is a good idea, you should see which is the worst "dairy" product for you, for me it's butter and chocolate ![]()

Re: Recipes for Lactose Intolerants
One of my housemates loves rice milk, the other two are fine with soy. But I assume it's kind of "getting used to because you want" - that might be easier than when you have to.
There are so many vegan recipe books out by now (plus the recipes are way more yummy to the taste we're usually 'used to'), it's one possibility to get some more ideas about what to eat if you're lactose intolerant.

Re: Recipes for Lactose Intolerants
I'm fine with soy milk, but it's not milk. It tastes completely different, I don't understand why it's called milk just because it's white. I've discovered that powdered lactose-free milk is the only one that works for me. I tried lactose-free milk, but it was still considered an act of war by my stomach's war council haha.
I have the biggest trouble with whole milk (duh) and cheese. Being in college and not being able to eat pizza feels like a curse. Doesn't goat cheese have MORE lactose than cow cheese, though? I think I read that somewhere. I've been looking all over the place for lactase supplements, but they don't sell them anywhere in Mexico. It sucks D:.

Re: Recipes for Lactose Intolerants
No i think goats cheese is fine, I don't have a problem with it and my stomach seems to be ok with it. I think it has lactose in it but it seems to be something with the fat molocules in goats milk that means it can be absorbed easier than cows milk can.

Re: Recipes for Lactose Intolerants
I am intolerant to milk. It doesn't affect me much, because to start out with, I dislike milk and cheese. It's almost like asking a vegetarian to give up bacon-not much of a sacrifice. Anyway, I'm on soy milk, and I love it. I would rather drink soy milk than goats' milk, because goats' milk tastes foul, IMO.
(Oh, I found out I'm lactose intolerant recently. A few weeks ago, I drank chocolate milk, and for two days I had bloatedness and runs. I felt rubbish. At first, I thought I'd had the flu which was going around my class, but when no other symptoms-fever, runny nose, cough and so on came up, I knew it was the milk.)

Re: Recipes for Lactose Intolerants
I don't think I'm lactose intolerant but the only dairy my stomach can handle is Greek Yogurt. But I do agree with those who have mentioned vegan recipes; other than the yogurt I follow a vegan diet. There are so many products out there now: Daiya cheese, almond milk, non-dairy chocolate chips and more. For recipe ideas check out peasandthankyou.com and ohsheglows.com. Both are blogs written by vegans and have delicious recipes (both sweet and savory)

Re: Recipes for Lactose Intolerants
I'm allergic to dairy, and the blog I use the most is www.fatfreevegan.com. They have some great and easy dairy free recipes.
About the rice/soy milk, you might also try almond milk. My husband prefers it over soy or rice.

Re: Recipes for Lactose Intolerants
Hi Michealleo, I'm lactose and gluten intolerant. Dairy gives me terrible migraines and a skin rash, so I'm very strict about dairy while I do have gluten every once in a while. Fortunately there's a gluten/dairy free grocery store nearby. I also have a hard time digesting raw vegetables and there's another ingredient I have trouble with, but we haven't figured out what it is yet. Definitely makes things hard, but I've gotten used to eating the way I do.
Have you seen this baking book? http://www.babycakesnyc.com/2011/01/...-cookbook.html They have some great sweets in there.
