I think that Voldemort, despite of the fact that he don't know love, is a bit narcisist, so he would smell his own scent - which must be terrible (after he emerged from the cauldron in GoF), but he would find it the best.

I think that Voldemort if he could smell anything from Amortencia it would be himself or some sort of smell asscoiated with power. I don't think he would smell anything about death because it's supposed to be what you love and he didn't love death (he only used it as a weapon to gain power) he was actually quite scared of it.

Dumbledore- I have an idea, but it's a spoiler, so I'll have to wait until the policy is lifted.

Snape--spoiler

Bellatrix Lestrange--Voldemort, whatever he smells like, which is probably unpleasant, torture

Neville--his parents, especially his mum, earthy smells, like dirt, and plants like mimbulus mimbletonia, friendship

Ron--Hermione, quidditch smells, food

Hermione--we already know most of, but probably scents of Ron too, she couldn't say that in class, now could she?

Harry--we already know a bit (flowery scent of Ginny), quidditch smells, smells he couldn't recognize, like those of his family and friends who have died, whatever bravery and loyalty smell like

Luna--the smell of the obscure...she believed in blibbering humdingers and the like, I'm sure they have some imaginary smell, so she'd probably smell what they're supposed to smell like, friendship to the trio and Neville, her father

James--Lily, mischeif...andrenaline maybe?, quidditch smells

Sirius--mischeif, smells of his friends

I could go on, but this will do for now, I might add more later.

Maybe he didn't smell anything? Since he was a special case as he didn't love.
Ooh and Hermiones third scent was of Ron's hair..jkr said in an interview.
