Remember Barty Crouch, Jr.? Dumbledore said he could not give testimony in regards to anything that happened. I think that a person who'd had their "soul sucked out" would just be a kind of, well, blank. They wouldn't be able to really do anything. Not motivated to live. Just a shell. I don't think a person would live very long afterwards. Probably starve to death or something, they'd just have no motivation to stay alive. I don't even think they could be used as an army.

I didn't mean in a literal coma just not functioning as a human being; yes, an empty shell.

I think that in HP, the wizards' souls replace a good chunk of what the brain takes care of in real life- memory, thoughts, and decisions. These things are still possible without a brain, as evidenced by Vapourmort without his body. Without it, I think the brain still has the necessary components to transfer sensory input to sensory output; things such as feeling hungry and searching for food, feeling tired and sleeping, feeling cold and finding shelter and so forth, but one would be devoid entirely of the things which make us human- sentience, essentially- goals, dreams, rationalization and so forth. One would be little more than an organism.
